Abstract

The article discusses the results of amino and fatty acid analysis of the aerial part of Echinops albicaulis , collected during mass flowering in Malaysary area in 2015 Almaty region. The research was
conducted at the laboratories of the Faculty of Chemistry and Chemical Technology of Al-Farabi Kazakh National University t and Kazakh Academy of Nutrition. During research we determined the qualitative component composition and quantitative content of various amino and fatty acids in the aerial part of Echinops albicaulis of the Asteraceae. The research showed the predominate of proline, alanine, glutamic and aspartic acid in the elevated part of the amino acid, oleic and linoleic acid from fatty acids.
